Chef Sandoval is passionate about sharing his native cuisine of Mexico and showcasing contrasting flavors, culinary traditions and iconic dishes from different regions. 

The Mexican Road Trip menu will take guests on a tour of the flavors from the Bajío, a region of West North-Central Mexico that includes parts of the states of Aguascalientes, Guanajuato, Jalisco & Queretaro. Local produce informs much of Bajio’s traditional fare, including it’s famous carnitas. Unique spices and sweet treats such as cajeta are also classic elements of Bajío cuisine.
